Cadbury Chocolate Cupcake with Cream Cheese Frosting

Admit it. Who doesn't love cupcakes?

Even if your tastebuds are not amused by it, it can still certainly satisfy one's visual needs.
Have you ever seen a more cheerful dessert? Because of all the likable qualities in cupcakes, they are now officially included in all kinds of jolly events: birthday celebrations, baby showers, graduation days, weddings, you name it. But do you know that it is also a joyful thing to make them at home? Be creative and make your own cupcakes when you are out of things to do on a Sunday afternoon!

I got this Cadbury's unsweetened cocoa powder the other day. 
So I thought I might use it in my chocolate cupcakes!
Combine your flour, baking powder, cocoa powder and sugar in a large mixing bowl.
I used this aluminum-free baking powder.
Add one egg at a time.
This is a secret ingredient that I use in most of my cake recipes - Natural plain yoghurt.
(Greek yoghurt would even be better!)
It really makes your cake incredibly moist and that is how I like my cake to be. 

Some people like using sour cream but I prefer yoghurt better since it is healthier, lighter and most importantly, moister!
Also, don't forget to add in your vanilla extract.
Line your cupcake cups in the baking tray and preheat your oven.

When you are waiting for your oven preheated, I am spilling another secret to you guys ;)
Take our your favourite pack of chocolate.

Melt your chocolate with some butter in a double boiler.

Pour the melted chocolate into the cake batter and mix until well-incorporated.
Do not overmix, unless you want your cupcakes to be hard as stones.

Adding the melted milk chocolate (you can use dark chocolate if you want) really brings the moistness and the chocolate-ness of the cake to a whole new level. TRUST ME!

Fill your cupcake cups to 2/3 full. 
It will more likely to give you a nicer surface to work your frosting on.

Decorate in however way you want.

Well...sometimes THIS happened.
But it is easily fixed by gulping it down your throat :)

In my opinion, these chocolate cupcakes go perfectly well 
with this natural caffeine-free pomegranate herb tea.

Ingredient List 
(12 servings)

3/4 cup all purpose plain flour
1/4 cup cadbury cocoa powder
1/2 cup sugar
2 tsp baking powder
1/2 tsp vanilla extract
2 eggs
1/2 cup natural plain yoghurt
1/2 cup vegetable oil
1/4 cup milk chocolate
2 tbsp butter


1. Preheat oven to 320F/160C. Line cupcake cups in the baking muffin tray.
2. Combine all dry ingredients in a mixing bowl.
3. Add egg one at a time. Mix well.
4. Add plain yoghurt, vanilla extract and vegetable oil gradually. Mix well.
5. Melt chocolate and butter in a double boiler.
6. Pour melted chocolate into the cake batter. Mix until just well-incorporated.
7. Bake for 18 mins. Stand for 2 mins and transfer onto wire rack to cool.
8. Frost when completely cool. 

Cream Cheese Frosting
Ingredient List

2 tbsp unsalted butter (room temp.)
1/2 cup cream cheese (room temp.)
1 tbsp fresh lemon juice
1 tsp vanilla extract
1 1/2 cup powdered sugar


1. In a large bowl, cream together the butter and cream cheese until fluffy. 
2. Add the remaining ingredients and mix until creamy or your preferred consistency.
